Vegan brownies

Brownies are my absolute obsession and 110% one of my favorite foods! I have such a sweet tooth which is a bit problematic when it comes to healthy eating. I’m not vegan but I do try to avoid eating a ton of dairy so I’ve done a lot of experimenting with vegan dessert recipes which has actually been really fun and has helped me stay on track.

I’ve always found it impossible to make homemade brownies that aren’t super dry and they just never turn out right so I thought I’d try out a vegan recipe. This recipe is kind of compiled from a couple of different Pinterest recipes that I’ve tested out and finally I made these and honestly; they are amazing!!

These are the absolute perfect dessert to make for a big group but to be honest, I could eat the whole pan to myself. They’re super moist and gooey; I prefer them to be gooey rather than cakey so I cook them for a bit less time but you can always just keep them in the oven a little longer.

I think I mentioned this in my last post, but; my main goal for this blog is to create super healthy but also easy and affordable recipes because I find there are so many health bloggers out there that have, although amazing, often pretty expensive recipes ones with weird ingredients.

29134346_1340176896083184_1525886482_n29345060_1340176929416514_554893808_nI’ve never actually experimented with vegan butter before because I usually use coconut oil as a substitute but I think it’s really crucial to use in brownies because otherwise I find they don’t turn out moist which is really all you want in a brownie! Obviously it’s still not the number one healthiest thing but it’s better than the alternative. 29134746_1340176909416516_30420873_nI try and find really pure dark chocolate for baking because I find the flavour is so much richer and it tastes so good if you add chunks into the batter as well as melting some of it in. 29345523_1340176872749853_2084338186_n29019921_1340176822749858_1288692332_nI was super weary about the whole flax egg thing when I saw it but it actually works really well! I appreciate that this isn’t the most aesthetic photo but I wanted to show you what it looked like so it’s easier to replicate. It makes a consistency that is literally exactly like an egg would be and flax seed is such a good source of iron and fibre which is a bonus!29134464_1340176782749862_1096618844_n29341607_1340176762749864_1057694922_nYou kind of have to roughly guess when everything is mixed in completely, as you would with any recipe but after doing a couple of trial runs, I’ve found it’s super important not to over beat the batter. (Makes 12-15)

INGREDIENTS

1/2 cup vegan butter

1 cup brown sugar

100g dark chocolate

2 tbsp flax seed

3 tbsp water

1/2 cup plain flour (gluten free flour/spelt flour works too)

1/2 cup unsweetened cocoa powder

1 tsp vanilla extract

METHOD

  1. Preheat the oven to 180 degrees
  2. Melt the butter in the microwave for a few seconds until it is soft and mix with brown sugar
  3. Make the flax egg by mixing the flax seed with water and add into butter and sugar mixture
  4. Melt half of the chocolate in a saucepan or in the microwave and add into batter
  5. Add cocoa powder, vanilla and plain flour
  6. I find sometimes it might be a little stodgy so add in a splash of almond milk until it looks like the right consistency
  7. Cut up the other half of the dark chocolate into small chunks and mix into the batter
  8. Grease a square pan with the butter or coconut oil
  9. Pour in the batter and spread out until it is distributed evenly across the pan
  10. Bake for 20 minutes (I tend to check them every 6 minutes or so because I HATE overcooked brownies!)
